Melt In Your Mouth Cornmeal Crusted Catfish
Ingredients
2 LBS. catfish nuggets
1/2 cup buttermilk
1 cup cornmeal
1 tsp. hot sauce
4 TBS. butter
2 TBS canola oil
1 tsp. sweet basil
1 tsp. lemon pepper
1 tsp. paprika
1/2 tsp. salt
Directions
Stir together the buttermilk and hot sauce.
Pour the mix in a zip lock bag and place the catfish in the bag with the mixture.
Now marinate the catfish for 10 minutes.
Meanwhile, mix the salt,lemon pepper,paprika, and sweet basil together.
Put the cornmeal in a different zip lock bag and add the spice mixture blending it all together.
Over a medium high heat, melt the butter in the skillet and add the canola oil.
Take the catfish out of the marinate and put it in the cornmeal bag. Shake real well to coat the catfish.
When the butter and oil is hot,place the catfish in the skillet carefully making sure you don't burn yourself. Fry for about 3 minutes then turn once and frying on the other side for about 3 minutes.
Remove from skillet onto a plate with a paper towel on it.
You are now ready for this catfish to melt in your mouth.
